There are multiple nutritional benefits contained within Red Cabbage Sauerkraut. In the same way that Blueberries deliver an abundance of Antioxidants, the same compounds give red cabbage its Antioxidants and distinctive rich dark colour. Red Cabbage has one of the highest levels of naturally available Vitamin C, much more even than Oranges! Red Cabbage Sauerkraut is also rich in numerous strains of Beneficial Bacteria.
Fermented Red Cabbage Sauerkraut, unpasteurised and teeming with all the good bacteria we need, which we call the good guys! We make our Fermented Superkrauts by taking Organic Ingredients and finely shredding them, we then work the Cabbage hard manipulating the recipe manually whilst carefully adding just the right amount of Himalayan Pink Salt to draw out the Vegetable Juices. Once we have worked and manipulated the Organic Vegetables and Pink Salt mix to the perfect consistency, we then begin the rigorous testing phase, constantly monitoring the ferments pH levels and temperature readings throughout the fermentation period. As soon as the first tests are completed, we then seal the ferments to deprive them of any oxygen. The ferments are then placed in our temperature controlled fermentation room, where over the duration of the fermentation period we constantly monitor and test for the changing pH levels, as well as temperature fluctuations and bacterial growth. Only then, when we are 100% satisfied that the batch of Sauerkraut has fermented to perfection, do we release it ready for jarring and sending out to our fabulous customers.
